Our place is tucked away at House Number 3/10 in Jankipuram Vistar. It’s a quiet enough residential area, but we stay busy inside. We focus on the flavors people expect from Lucknow. It’s a lot of prep work and tasting. We started this because we really missed the way food used to taste when things were done slowly. Nowadays everything is fast, but we try to stick to the older ways of doing things. It’s not a big factory. It’s more like a kitchen that got a bit bigger than we planned. We spend a lot of time on spices and making sure the mixes are right. Sometimes the batches don't come out exactly how we wanted, so we fix them. That’s just part of the job. It gets hot in the kitchen, especially in the summer months, but we’re used to it. Neighbors know us by the smells coming from the windows. We aren't trying to be the biggest company in the city. We just want to make stuff that tastes like home. If you're ever in the Vistar area, you might see our delivery bikes heading out. We handle everything ourselves, from the cooking to the packing. It’s a lot of work for a small team, but it keeps us on our toes. We like it that way because it means we know every jar we send out is okay.
