Haryali Restaurant

Haryali Restaurant sits right on Bundi Road in the Kota H O area of Rajasthan. Kota is a place that never really sleeps because of all the students and travelers moving through. The restaurant is quite simple, and we focus mostly on getting the food out to the tables without too much delay. The sun hits the front of the building pretty hard in the afternoons, so we keep the shades down to stay cool. It’s a bit dusty outside because of the traffic on Bundi Road, but we try our best to keep the inside clean for everyone who walks in. My staff and I have a routine where we prep the vegetables in the morning while it’s still a bit cool. We don't have a big corporate setup, just a kitchen and a dining area that has seen better days but still does the job. I’ve been in Kota for a long time, and I’ve seen the city change, but the way we run this place stays pretty much the same. We deal with the usual problems like the power cutting out or the water supply being low, but you just figure it out as you go. It’s a practical business for practical people who are just looking for a seat and a meal while they are on their way somewhere else. We spend our evenings dealing with the rush and then cleaning up the plates before we head home.
