This place is at 2829 in B Ward, which is part of the Mandlik Wasahat area in Kolhapur. It’s a local neighborhood where everyone knows each other’s business. My kitchen is where I spend almost all my hours, and it’s filled with the smell of toasted spices and fresh ingredients every single morning. The walls are a bit stained from the steam and the cooking oils, but that’s just how it goes when you’re working with food all day. I don’t have a big staff or a fancy uniform. I’m an assistant chef who works on a lot of different things, mostly helping out with local events or preparing stuff for bigger kitchens. The floor is made of stone and stays relatively cool even when the Kolhapur sun is beating down on the roof outside. B Ward is a busy place, and you can hear the sounds of the street vendors and the scooters passing by 2829 all the time. I keep my knives sharp and my pots clean, and that’s about the extent of the decoration in here. It’s a honest living, and I like being in Mandlik Wasahat because it’s where I feel at home. Sometimes people stop by just to see what’s cooking because the smell travels down the block. It’s not a restaurant with menus, just a workspace where I do my job every day.
