Our dabba is located at Shop 19 and 20 on Railway Road in Nilokheri. This is in the Karnal district, and we are right where people walk to and from the station. The shop has two shutters that we roll up every morning. We have some wooden benches inside and a few chairs out on the pavement if the weather is nice. It is a very plain setup. We don't have a big staff, just a couple of us working the kitchen and the front. The menu is written on a small board, but most people already know what they want before they sit down. We see a lot of the same faces every day, like the shopkeepers from nearby or people who work for the railway. The kitchen has a big stove and a stack of steel plates that get washed and dried all day long. It can get a bit smoky inside when we are busy, so we keep the doors wide open. We don't have any soft music or fancy lighting. It’s just the sound of the ceiling fan and the people talking. Nilokheri is a small place, and we like being a part of the daily routine here. We provide a simple service for people who need a break. It is an honest, local business that doesn't try to be something it’s not.
