Zaaika India Ka

Started out in Jodhpur on Mandore Road quite a while back. We are right there in Paota, just above the Technocrafts Gas Agency. It’s a busy spot with trucks and bikes always moving. Most mornings begin with the sound of shutters going up along the street. It gets hot here in Rajasthan, so we keep the fans moving all day long. The gas agency downstairs has people coming and going every hour, and we see them from our windows. Being on Plot No-5 puts us right in the middle of the local traffic. We don't do anything fancy here, just keep the place clean and cook what people like to eat. Sometimes the power goes out or the dust gets inside, but that’s just how it is living in this part of town. The staff knows most of the regular faces who stop by after work. We spend a lot of time prepping in the kitchen before the lunch crowd starts arriving from the nearby offices. It’s a simple setup. Nothing too shiny or new, just a floor above the street level where we do our work. We’ve stayed in this same spot for years now. People know to look for the sign above the agency. It’s a routine we’ve gotten used to, from the early morning tea till we close up at night. The stairs are a bit narrow, but nobody seems to mind much when they are hungry for a meal.
