Royal Tarka

Our place, Royal Tarka, is at 102 First Polo in the Paota area. It is right on the road that goes toward the Fort, so we see a lot of traffic and people passing by every day. We are located on the first floor of the building. It is a bit of a climb up the stairs for some, but people do not seem to mind once they get inside and sit down. Jodhpur is a city where people really love their food, and we try to do our part by keeping things simple. The kitchen is not very big but we manage to get everything done. We do a lot of tarka dishes, which is where we got the name for the place. You can often hear the sound of the oil and cumin seeds spluttering from the seating area. We do not have air conditioning that works perfectly all the time, so it can get a bit warm in the summer, but we keep the fans going. The furniture is just simple wood and we do not bother with fancy tablecloths or decorations. Most of our customers are locals who live nearby or people heading up to see the old sights. We open around lunchtime and keep the kitchen going until late in the evening. It is a lot of hard work keeping the spices fresh and the kitchen clean. We do not have a marketing team. It is just us and a few helpers in the back.
