If you are looking for Rajasthani Foods, we are located inside the Rishi Raj Market. It is a busy place to be, especially in the mornings when all the vendors are setting up their stalls. Our spot is usually filled with the smell of different spices and whatever we are cooking that day. It gets quite warm in the back where the stoves are, so we are always moving around to keep cool. The market is full of people shouting and moving bags of goods, so it is never quiet around here. We have some shelves where we keep the ingredients and a large table for prepping everything. The floor is made of stone and it stays a bit cooler than the rest of the room. We don't have a menu on the wall or anything fancy like that. People just know what we have based on the day. Working in Rishi Raj Market means we see the same faces every day, which is nice. Sometimes the delivery trucks block the entrance, but we just wait for them to move. We don't use any big machines, mostly just doing things by hand like it has always been done. The pans are heavy and the days are long, but that is just how it is. It’s an honest way to spend the time and we like being part of the market life. Most evenings we spend cleaning up and getting ready for the next day's rush.
