Vimpis Pizza

In Gandhi Nagar, Jammu, we are tucked away near the Canara Bank. This pizza shop has been our daily life for a while now. Every morning starts with mixing the flour and water to get the dough ready. It is sticky work, and our hands are usually covered in flour by ten o'clock. The ovens make the whole shop very hot, especially in the Jammu summers, but you get used to it after a few months. We use basic ingredients that we get from the local suppliers. It is not like those big international chains; we just make the pizzas the way we like them. Sometimes the cheese doesn't melt exactly the same way every day, but that is just how it goes when you're doing it by hand. We have a few benches for people to sit while they wait for their orders. A lot of people coming from the bank stop by for a quick slice. We spend a lot of time wiping down the counters and cleaning the pizza stones. Our delivery bike is a bit old and makes a lot of noise, but it gets the job done. We don't have a big marketing team or anything like that. It is just us in the kitchen, making sure the crust is cooked through and the toppings are fresh. It is simple work, and it keeps us busy from morning until late at night.
