Bombay Special Pav Bhaji

Running this pav bhaji place in Jammu has been an interesting journey for us. We are set up in the Trikuta Nagar area, right in the Main Market which is always buzzing with people and cars. If you know where Sai Palace is, we are just near there. Bombay Special Pav Bhaji is what the sign says and that is mostly what we do here every day. The griddle is almost always hot and you can hear the sound of the mashers going from early in the afternoon until we close up. It gets quite crowded in the evenings when families come out for a stroll or some shopping. We use a lot of butter because that is how people like it and we do not see any reason to change that. It is not a big fancy restaurant, just a spot to get some hot food while you are out in the market. The streets can be a bit chaotic with bikes everywhere but our customers do not seem to mind the noise. We spend most of our day prepping vegetables and making sure the buns are fresh for the next batch. It is a lot of standing and moving around in a small space. We have been here in Trikuta Nagar for some time and have seen the market change a bit over the years. We just focus on serving the food and keeping the place going. It is a simple life really, just making pav bhaji for whoever stops by.
