Desi Chef is located at C Scheme 35. This area is usually very busy with offices and people moving around all day. We started this place because we wanted to serve the kind of food people eat at home. It’s not a big fancy restaurant with waiters in uniforms. It is more of a practical kitchen where we focus on getting the flavors right. My cousins and I spend most of our time in the back preparing vegetables and spices. The heat in the kitchen can be a bit much during the summer, but we are used to it now. We don't have a massive menu. We stick to the things we know how to cook well. Some people come in for a quick lunch during their office break, while others take parcels home for dinner. The seating area is simple, just some tables and chairs that we wipe down constantly. We buy our supplies from the local mandi every morning to make sure everything is fresh. Sometimes we run out of certain items by late afternoon if the crowd is bigger than usual. We don’t spend money on glossy flyers or social media posts. People just find us because they work nearby or live in the apartments around C Scheme. It feels good when someone finishes their plate and says the food reminded them of home. That is basically why we do this every day from morning till night.
