Balaji Caterers

If you go to 1415, Opp Bairathi Bhawan,Gangapole, Tripolia Bazar, you will find our workspace. We have been running Balaji Caterers from this spot for a long while. Being right in Tripolia Bazar means there is always a lot of noise and people moving around outside. It is not a glamorous job by any means. Our days start long before most people are awake so we can get the coal fires started. We mostly cook for weddings and smaller local parties in the neighborhood. The kitchen is quite small and gets very crowded when all five of us are working at the same time. We have metal tins stacked up to the ceiling and bags of rice in every corner. Sometimes the neighbors pop their heads in to see what we are making, which is fine by us. We do not use any of those modern fancy machines. We still use the same heavy pots and long spoons that have been here for years. Balaji Caterers is just a group of local guys who know how to manage a kitchen. We do not spend money on advertising because people in the bazar already know where we are. The floor is usually a bit slippery from washing the greens, and there is always a big pile of dishes waiting to be scrubbed. It is a lot of physical labor, but it is what we know. We just focus on the next order and getting it done right.
