Vijaya Tiffins

Vijaya Tiffins is a small place we run over at 8-3-231/F/16& 17. We spend most of our early mornings getting the batter ready for idlis and dosas. The stove is usually hot by 5 AM. It’s a basic food stall, nothing fancy at all. We have some plastic stools for people to sit on, but many just stand and eat quickly before heading to work. The steam from the large cookers fills up the space, and it can get quite hot in the kitchen area. We use simple ingredients that we buy from the local market every couple of days. Sometimes we run out of chutney faster than expected, and we have to scramble to make more. The address can be a bit confusing for some, but once you find the row of shops, we are right there. It’s a noisy spot with the clinking of plates and people chatting over their breakfast. We don’t have a menu printed out; we just tell people what we made for the day. It is usually the same favorites every morning. We keep the place as clean as we can, though it gets messy during the breakfast rush. We aren't trying to be a big restaurant. We just want to serve hot food to the people who live and work nearby. It’s tiring work, standing on our feet all day, but it’s what we do. We usually close up once the morning rush is over and the batter containers are empty.
