Operating out of Chikkadpally is quite an experience because the area is always packed with people and vehicles. At Sri Sairam Caterers, our mornings start way before the sun is even up. We have to get the stoves going early to make sure everything is ready for the morning deliveries. The kitchen gets really hot, especially in the summer months, but we just get on with it. We handle a lot of different orders, from small family get-togethers to larger gatherings. It’s mostly just a group of us who know how to cook the traditional way. We don't really have a big office or a fancy reception area. Most of the space is taken up by big pots, pans, and sacks of rice. If you come by 1-10-122/20, you'll probably smell the spices before you even see the door. We spend a lot of time cleaning vegetables and grinding masalas by hand because it tastes better that way. Sometimes we run behind schedule when a delivery van gets stuck in traffic, which happens a lot around here. It's stressful, but we manage. We don’t do much advertising; people just find out about us from their neighbors or friends. We try to keep things straightforward and honest. Cooking for others is a lot of responsibility, so we take it seriously even if we’re just a small local operation. That’s how we’ve kept going for this long in this neighborhood.
