Our place is tucked away at Archana Nilayam in Tilak Nagar, right across from the hospital. Running a catering business means we are usually up and working while most people are still asleep. We have these big massive pots that take up a lot of space in the kitchen. There is always a lot of chopping and peeling going on. We spend a lot of time packing food into containers and loading up the vans to get things delivered on time. It gets pretty chaotic when there is a big order to get out. We have to navigate the narrow streets around here, which isn't always easy. The staff here is like a small family, even if we get on each other's nerves when things get stressful. We don't have a fancy office or anything like that. It is just a working kitchen where we try to get the seasoning right and make sure the food stays warm until it gets where it is going. Sometimes we are working on three different orders at once, so there are lists pinned up everywhere on the walls. We've been doing this in Tilak Nagar for a good while now. It is hard work and your back usually hurts by the end of the shift, but we just keep at it day after day. We also have to keep the 22-1105/27/1 area clear for the delivery trucks coming in.
