Our kitchen is located at 16-11-16/K/24, right across from the Masjid Saleem Nagar in Malakpet. It is a busy little area, and you can usually smell whatever we are cooking from down the street. We handle a lot of catering for local events, so there are always big stainless steel pots being moved around and crates of vegetables arriving in the morning. It’s not a fancy office; it’s a working kitchen where things get a bit messy and loud. We spend our days planning for the next big lunch or dinner order. Sometimes it’s for a small family gathering and other times it’s for something much bigger where we have to load up the van and get across town. Malakpet is a crowded place, so navigating the narrow lanes with all our gear is always a bit of a challenge for the drivers. We don't really do much in the way of talking ourselves up or using fancy words. We just focus on the cooking and making sure we have enough hands to get the job done on time. The staff has been with us for a bit, and we all just know our roles. It’s hard work, standing over the stoves for hours, but it’s what we do. We don't have a storefront for people to sit and eat; it’s all about getting the food to where it needs to go for the customers. It is a long day from start to finish.
