Our kitchen is over at 35-65 Lingampally Road in the Tara Nagar area. It’s a busy part of Serilingampally, so there’s always something going on outside the window. We spend most of our hours over the stoves or packing up containers. The air always smells like whatever we are cooking that morning. It gets pretty hot in the back, especially during the summer months. We don’t have a fancy dining room or anything like that. It’s mostly about the food and getting it ready. We get our ingredients from the local markets nearby. Sometimes the onions are great, sometimes they’re small, we just work with what we get. There are a few of us here, and we all know our jobs. One person handles the chopping, another does the frying. It’s a rhythm we’ve picked up over the years. Tara Nagar is a good spot because people are always passing through on their way to work. We see a lot of the same faces every day. We don’t use any complicated machines, just old pots and pans that have seen a lot of use. The floor gets a bit greasy by noon, so we have to be careful. We just keep our heads down and keep the orders moving. It’s not a complicated business. We make the food, pack it, and move on to the next batch. We stay open late most nights to make sure everything is cleaned up for the next day.
