Moula-Ali is a busy place and we have been here at Venkateswara Nagar Colony for a while now. Most mornings start with cleaning the counters and checking the flour sacks. It's not a fancy setup, just some ovens and a few tables. Sometimes the power goes out and we just wait it out. People from around Secunderabad come in, mostly locals who know the H.No 5-11-207 spot. We don't have a big team, just a few of us who know how to toss the dough. The flour gets everywhere, even on our shoes. On weekends it gets loud because of the traffic outside. We try to keep things simple. There is no big secret to what we do here. We just make the food and hope people like it enough to come back. The oven stays hot all day. Sometimes we forget to turn the radio off. It’s a small space, so you can see everything happening in the kitchen from the front. We don’t spend much time on decorations or anything like that. The walls could probably use some paint, but for now, they are fine. It's a regular neighborhood shop where the regulars know our names. We just keep going, day after day, making sure the orders are ready when someone walks in from the street. Our supplies arrive in the morning and we spend time sorting through the vegetables. It’s just how things are at this little corner.
