Our office is on the second floor of the Dillu Apartments in Secunderabad. We are right across from the hockey stadium on S P Road, which is a landmark most people around here know. It’s not a fancy storefront with big glass windows. It is more of a working space where we coordinate everything for the events we handle. The phone rings a lot during the wedding season, and there are always lists of ingredients spread out on the desks. We spend most of our time out at different venues, setting up tables and making sure the food stays hot. Back at the apartment, it’s mostly about planning and logistics. We have been doing this for a while now, so we know which markets have the best produce on which days. Our staff is a mix of cooks and helpers who have been together for years. We don't have a polished corporate office with a receptionist. You’ll usually find someone drinking tea and checking a delivery manifest. It gets a bit chaotic when we have three different parties on the same night, but we manage to get the trucks loaded and out on time. We don't use much flowery language about what we do. We just cook the food, pack the vans, and make sure there is enough for everyone at the party. It is hard work and long hours, but it keeps us busy and the kitchen running.
