Our place is tucked away in Ravindranagar, Sithafalmandi. It’s a busy spot in Secunderabad, especially when the trains go by nearby. We spend most of our time teaching young people how to cook and manage hotels. The kitchen gets really hot in the afternoons, especially during the summer months. You can hear the clatter of pans and students talking all the way down the hall. We aren’t a huge fancy campus with glass walls, just a regular building where people come to learn a trade. Most of the staff has been here for years, so we all know each other’s habits. We drink a lot of chai during the breaks. The students are always running around, trying to get their uniforms right or worrying about their exams. It gets pretty loud during lunchtime. Sithafalmandi is a bit of a maze if you’re new, but once you find our number 12-12-192, you’re in the right spot. We focus on the basics, like how to set a table or cut vegetables properly without cutting your fingers. There’s always something that needs fixing, like a leaky tap or a flickering light in the hallway. We don’t have any big speeches to give. We just show up, open the doors, and help the kids get ready for their jobs. It’s a lot of routine, but seeing them actually get the hang of a recipe makes the long hours feel okay. We’re just here doing our bit for the neighborhood and the industry.
