We run a restaurant business, which means we are on our feet most of the time. The space is a mix of the dining area and the back kitchen where all the real work happens. It’s usually loud with the sound of pans and the staff talking. We don't have a big corporate manual. We just taught everyone how we like things done and they follow that. Sometimes we run out of a certain ingredient because the market was closed or the supplier forgot, and we just have to change the menu for that day.
