This business started out with some family connections over in Chicago, which is why we have that in our name, but we are actually based right here in Sainikpuri. Our shop is at B-137 on the Second Main Road. Secunderabad has a different vibe than the rest of the city, and we really like being in this neighborhood. We focus on food that has a bit of that American influence but we make it with what we can get locally. It is just a few of us working in the kitchen and behind the counter. The Brothers part is real, as it is a family-run thing through and through. We spent a lot of time getting the kitchen set up just right. It isn't a huge place, so when it gets busy, you can really feel the heat from the ovens. We don't have a fancy dining room with waiters, it is more of a walk-in kind of spot. We get a lot of locals from the colony who just want a quick bite on their way home. Sometimes we run out of certain ingredients by the evening, but that is because we try to keep everything fresh and don't like overstocking. We keep our prices fair because we want the neighbors to keep coming back. We do the cleaning ourselves at the end of the night and get ready to do it all again tomorrow. It is just how we do things here and it works for us.
