Since this is an OPC, it is a pretty small operation compared to those big food chains you see everywhere. The kitchen is really the heart of everything we do here. It is often loud with the sound of fans and people moving around quickly. We spend a lot of our time looking at recipes and making sure the stove is working like it should. Naveen Nagar is a busy little pocket of the city and it feels like there is always someone passing by the door. We don't have a big marketing department or anyone to write fancy speeches for us. It is just about the food and the work that goes into it every morning. Some days are much longer than others, especially when there is a lot of prep work to finish before the lunch rush starts. We have had to learn how to manage the space we have, which isn't huge, but it works for what we need. It is a bit of a juggle sometimes, keeping track of everything ourselves. We just show up, put on our aprons, and get to it. It’s a plain and simple business run by regular people who live and work right here in the neighborhood. We don't try to be something we are not and we just take things one order at a time.
