Subway Restaurants

Our shop is over in M.S. Maqtha, near Rajbhavan in Hyderabad. It’s a central spot, so we get all kinds of people coming in. Subway Restaurants is a name everyone knows, but here in Maqtha, we run things ourselves. It’s a small space where we spend the whole day preparing vegetables and baking bread. You can usually smell the bread from the street when you walk by. It’s a busy area with a lot of government offices nearby, so lunchtime is usually a bit of a rush. We don't have a big corporate team standing over us. It’s just a few of us behind the counter making sandwiches as people ask for them. The building isn't anything fancy, just a regular spot on the road. We’ve been here for a while and we know many of our regulars by their first names or at least by what they usually order. Sometimes the power goes out or the supply truck is late, and we just have to deal with it as it comes. It’s an honest job. We aren't trying to be anything we aren't. We just keep the place clean and make sure there is food ready for anyone who stops in. Being near Rajbhavan means there is always something happening outside, but inside we just focus on the task at hand. It’s a simple life for us here in India and we just keep the shop going.
