We are based out in Samratnagar, specifically at Plot No 68, which is just across from Satyasai Nagar in the Jellaligudda area. Our main work is catering for the airport, so our schedule is completely tied to when the planes are flying. This means some of us are starting work in the middle of the night or very early in the morning. The kitchen is always moving, with people chopping vegetables, cooking large vats of rice, and packing trays. It gets quite hot in there, as you can imagine. We are located in Ranga Reddy, which is a bit of a drive to the actual Rajiv Gandhi International Airport, so we have to be very careful with our timing. If the trucks get stuck in traffic, it’s a big problem for the flights. The warehouse and kitchen area are kept as clean as we can manage with so much going on. We don’t really see the passengers who eat the food; we just see the crates going out and the empty ones coming back. It’s hard work and involves a lot of lifting and standing for long hours. The neighborhood around Samratnagar is mostly residential and small businesses, so we try to keep the noise down when the early morning shifts start. It’s a practical operation where the focus is just on getting the food prepared and sent off to the planes on time.
