Gandhi Ji Pakore Wale

We have been here at Janta Market in Sadar Bazar for quite a while now. It is shop number 16. My father started this and now we just keep it going every day. The stove gets hot early in the morning and we don't really turn it off until late. We spend most of the day cutting vegetables and mixing the batter in big bowls. It gets really crowded in this part of the market, especially when people are out shopping for their homes and get a bit hungry in the afternoon. There is always a lot of noise and bustle right outside our door. We do not have a big fancy seating area, just a small spot where you can stand and eat while things are still hot. People know us by the name Gandhi Ji Pakore Wale because that is what is on the board outside. We mostly just focus on getting the frying right so nothing is too oily. It is a small space, so things can get a bit messy during the rush hours when everyone wants their order at once. We try to keep things moving as fast as we can. Sometimes the line gets long, but people seem to wait because they know the routine here. We stay open until the batter runs out or the market starts closing up for the night. It is just a simple shop in a busy corner. The walls could probably use a new coat of paint.
