Dosa Plaza

Dosa Plaza is right on National Highway - 8, so we see a lot of people just passing through. It's a busy spot because of all the cars and trucks going by all day and night. We spend a lot of time in the kitchen over the hot griddles making dosas. The steam and the smell of sambar are always there. It gets really hot in the summer, but we just get used to it. We have a lot of different kinds of dosas on the menu, maybe too many sometimes because it makes the orders complicated for the cooks. The staff is mostly young guys who work hard to get the food out fast since people on the highway are usually in a hurry to get somewhere else. We have to clean the tables constantly because of the dust from the road. The parking lot out front gets pretty messy when it rains. We don't have much time for sitting around. When the lunch rush hits, it's just a blur of plates and shouting orders to the back. We've had some regulars who stop by every time they drive this route, which is nice to see. Sometimes the power goes out and we have to use the generator, which is loud and annoying. But we just keep going. It’s a simple business, nothing too complicated about it. We just make the food and hope the highway stays busy.
