Punjabi Tadka.

We operate out of U-16/25 in the U block area of Gurgaon. It is a bit of a maze back here, but we are near the RBS building which makes it easier for people to find us. This neighborhood is full of young people living in rented rooms and working in the big office buildings nearby. Because of that, we stay busy at odd hours. Sometimes it is quiet at noon but then very crowded at nine at night. The space is not very big, so we have to be smart about where we put the chairs. We have a small counter where people pay and a kitchen that takes up a good chunk of the back area. The walls are a bit scuffed from people moving around, and the lighting is just basic fluorescent tubes. We don't spend money on decor because it wouldn't last long with how much use the place gets. You can hear the delivery bikes idling outside the door most of the time. It is a fast-paced environment where the orders come in quick and we have to keep up. We go through a lot of onions and flour every day. The air inside usually smells like toasted bread and spices. It is just a hardworking spot in a busy part of town where we try to keep the tables clean and the food moving out of the kitchen as fast as we can.
