Baujee Ka Dhaba

You can find us on the 3rd floor of the MGF Metropolitan Mall right on MG Road in Gurgaon. It’s a funny place for a dhaba because usually you find these on the highway, but here we are inside a glass building with air conditioning. We try to keep the food like what you’d get at a roadside stop. The kitchen is always busy with the tandoor going and the cooks shouting orders back and forth. It’s loud and there’s usually a lot of steam in the air. We have some wooden chairs and tables that don't really match the shiny floors of the mall, but we like it that way. In the evenings, MG Road gets completely blocked with cars, so we see a lot of people coming in just to wait out the traffic. The staff wears regular clothes mostly, and we spend a lot of time cleaning up the dishes and clearing the tables. It’s a fast-paced spot. Sometimes the mall security comes by to check on things. We don't have a big fancy entrance, just the sign and the smell of the food pulling people in. I usually spend my time at the back making sure we have enough flour and spices for the next day. It’s just a simple eating place in a very busy, modern part of town. The 122001 area is always moving and we just move with it.
