Khayali Pulao

Khayali Pulao is a small shop located at Shop No 11 in the Main Huda Market of Sector 23, Gurgaon. We are pretty easy to find because we are right near the wine shop. It’s a busy market area, especially in the evenings when everyone is out doing their errands. Our space is quite compact. Most of the room is taken up by the cooking area because that's where all the work happens. We don't have a lot of fancy seating, just a few spots and a lot of people coming for takeaway. The 122015 area of Gurgaon is an older part of town, so the market has a very local feel to it. We spend our day prepping the rice and the spices. It smells like cooking all the time in here. We don't have a big staff, just a few of us who have been working together for a while. Sometimes the market gets very crowded and parking is a nightmare, but people still find their way to our door. We focus on the daily tasks, like checking the inventory and making sure the stove is working right. It’s a simple life running a shop in Sector 23. We don't do big advertisements; we just rely on the people walking through Huda Market. It’s a practical business, and we are just here to do our jobs every day until we close the shutters at night. We just try to keep the food consistent.
