Pishori Dhaba

Pishori Dhaba is located in the Gda Market at the UP Border in Sahibabad. This area is always a bit dusty and loud because of all the trucks and buses moving across the border. It’s a real transit hub, so we see a lot of people who are just passing through Ghaziabad. We are not a fancy restaurant with tablecloths; we are a dhaba. We have basic tables and benches where people can sit down and get a quick meal before they hit the road again. The market itself is quite crowded, and there is always some noise from the mobile repair shops nearby. We start our day early, usually before the sun is fully up, to get the lentils soaking and the tandoor heated. It takes a lot of coal and wood to keep things running, and the heat of the tandoor is intense even in winter. The air is often thick with the smell of cooking and diesel from the road. We don't have a lot of staff, so everyone chips in with the serving and the cleaning. Sometimes the power goes out and we have to rely on the emergency lights, but we don't stop the kitchen. It’s a rugged way to work, but we are used to it by now. Most of our customers are drivers or local laborers who just want something filling. We keep the water jars filled and the floors swept as much as possible given the location. It is a simple life on the border for us.
