Dosa Junction

We are located at Plot No C-115. That is in East Model Town. Dosa Junction is on the 3rd Floor of the Opulent Mall. Ghaziabad is a loud place. G T Road is right there and it never stops moving. 201002 is the code for this area. Being on the 3rd floor means we have a lot of stairs or the lift to deal with. We spend most of our time in the kitchen. It’s small and we are always bumping into each other when it gets busy. We try to be organized but it gets messy when ten orders come in at once. The mall is big but our corner is just our own. We have to carry the big containers of water because the plumbing can be tricky sometimes. My apron is always stained with something by noon. Usually, it's sambar or turmeric. We don't have a big corporate office or anything. It's just us and the stove. People stop by after seeing a movie or shopping. We see a lot of kids who just want the plain ones without any spicy stuff. We keep the salt and spices in big plastic bins. It’s not a fancy setup at all. We just do the work and then go home to rest. The mall lights are bright all day. Sometimes I miss the sunlight outside. But the work is steady and the road outside is always full of life and noise. We just keep going.
