We are over at plot number eight in Market Number 5, which is right in the NIT area of Faridabad. The Shiv Mandir is just nearby, so a lot of people stop in after they finish their prayers. Shunty Dhaba is just a local place where we focus on getting the food out hot and fresh. I’ve been working here for years and I know most of the people who walk through the door. It’s not a quiet place. There is always the sound of traffic from the market and the clinking of spoons. We have a few staff members who have been with us since the beginning. We start the day by cleaning the floors and getting the tandoor ready. It takes a while to get the heat just right. We don’t have any fancy decorations on the walls, just a few calendars and a clock that’s usually a few minutes fast. The chairs are old but they are comfortable enough for a quick meal. Sometimes when it rains, the market gets a bit muddy, but people still come in for a hot plate of food. We try to keep things moving fast because people are usually in a hurry to get back to their shops or offices. It’s hard work, standing on your feet all day, but it’s what we do. We don't have a website or anything like that. We just keep the kitchen running for the neighborhood.
