Open Grill

Huda Market in Sector 31 is one of those places that never really goes quiet. We are tucked in at Shop DSS-27, and you can usually see the people coming out of Easy Day with their bags while we’re setting things up for the afternoon. Faridabad gets dusty, so there is always a layer of it on the front window that we have to wipe off every couple of hours. The grill takes a while to get to the right temperature, and the smell of the charcoal starts to fill up the small space pretty quickly. We have a few stools for people to sit on, but they aren't the softest things in the world. Most of the time, we’re just busy trying to keep the orders straight while the noise from the market carries inside. It’s a small shop, and sometimes it feels even smaller when three or four people are waiting at once. The floor tiles are a bit chipped near the entrance from years of people walking in and out. We don't spend much time worrying about the decor or how things look to a stranger. It’s more about making sure the gas is on and the ingredients are chopped before the sun goes down. People around Sector 31 know where to find us if they’re hungry, right near the main walkway. We just stay here doing the same things every day until it’s time to pull the shutters down and go home.
