We are over here in Okkal, near Perumbavoor. It's a busy spot in Ernakulam district. We started Indian Kitchen Private Limited just to get some good food out to the local people. It is not a big fancy setup, just us working every day. The kitchen gets hot and we stay busy with the prep work and the cleaning. Most days are long but we like the work. We are located at Kizhekkepurath, right there in the Operambavoor area. People around here know the spot. Sometimes the traffic is bad on the way in, but that is just how it is in this part of Kerala. We focus on the daily cooking tasks. There is always a lot to do, from buying ingredients to getting everything ready for the day. We don't have a big office or anything like that. We don’t try to be anything we aren’t. We just show up, do the work, and go home. Sometimes the rain makes things a bit slow, but we keep going.
