Kumar Pav Bhaji Corner

Kumar Pav Bhaji Corner has been at Krishna Nagar Vijay Chowk for quite a while now. It’s just a small spot where we get things ready every morning. We start early, chopping up heaps of onions and mashing the potatoes until everything is right. The butter goes on the tawa and you can hear that sizzle all day. It gets really crowded in the evenings when everyone is out at the chowk. Sometimes it's hard to keep up with the orders because the space is tight, but we try to manage. People just stand around and eat, or take parcels home. There isn't much to the place, just a few stools and the big griddle where the bhaji stays warm. We don't have a big team, just a couple of us working the stove and handling the plates. It’s loud because of the traffic outside and people shouting their orders, but that’s just how it is here. Some days the pav is extra soft, other days we run out of lemon slices faster than we thought. We don’t do anything fancy with the menu, just the usual pav bhaji that everyone knows. It’s a busy corner and we’ve seen the shops around us change over the years. We just keep our heads down and keep the fire going under the pan. It gets hot in the summer, but the crowd still shows up for a hot plate. That's about it for us. We just keep going.
