Our place is over at 4A Pusa Road. If you know Central Delhi, you know this area is always crowded with people moving back and forth. We started this because we wanted to have a spot where you could get a bit of everything without it being complicated. The kitchen is always a bit chaotic, especially during the lunch rush when the office crowds start coming in. We have cooks who specialize in different things, so there’s always a lot of different smells going on at once. One minute it’s garlic and onions, the next it’s something sweet. The dining area is simple. We don’t have those fancy decorations that some of the newer places in Delhi are putting up. It’s just tables, chairs, and good light. Sometimes the delivery guys are standing by the door waiting for packets, and it gets a bit cramped. We spend a lot of time talking to the vegetable vendors every morning. Pusa Road is a busy stretch, so parking can be a headache, but people still manage to find us. We’ve had the same staff for a good while now, so we all know how the other person works. It isn’t a massive corporate chain or anything. It’s just a local restaurant where we try to keep the food consistent. We close up late at night and do it all over again the next day.
