Chandrika Vegetarian Delight

Our place is located at Asaf Ali Road 41373, which is a very busy stretch of road with lots of offices and traffic. Chandrika Vegetarian Delight has always been a strictly vegetarian spot. We do not allow any meat inside the kitchen at all. We start our day very early by chopping vegetables and getting the big pots ready on the gas. It gets quite humid in the kitchen when the lentils are boiling. We have a few ceiling fans but they do not do much when it is middle of summer. Most of our customers are people who work in the nearby buildings and come in for a quick lunch. They are usually in a hurry, so we have to move fast. The chairs are made of heavy wood and the tables have metal tops that are easy to scrub. We do not do any fancy plating or use expensive napkins. It is just plain food served on metal trays. Sometimes we run out of certain dishes by the afternoon and we just have to tell people we are done for the day. We buy all our supplies from the wholesale market down the road. Carrying the heavy sacks of rice is the hardest part of the job. My cousin handles the cash box and I stay near the serving area to make sure everything is moving along. It is a lot of work but it keeps us busy.
