Paratha@47

Paratha@47 is tucked away in Shop No 1 of Vaishali Complex. We’re right by City Hospital in Zone II, so there’s always people walking past. Some are heading to the hospital, others are just working in the area. We opened this place because we knew how to make decent food and needed a way to pay the bills. The kitchen is cramped, honestly. It’s just how these old complex shops are built. Every morning we start early, getting the gas stoves lit and the pans heated up. It gets quite warm in there. We don't have a fancy interior designer. We just put up some tables and chairs where they would fit. Some days we run out of certain fillings by mid-afternoon if the crowd is heavy. We don't use any secret recipes or anything. It's just salt, chilies, and whatever else goes into a standard paratha. My brother handles the billing, and I usually stay near the tawa. We see a lot of the same faces every day, which is nice. Sometimes the traffic outside gets really loud, making it hard to hear orders. We just shout over the noise. It’s a basic setup. We try to keep the floors swept, but with the dust from the road, it’s a constant battle. We’re just here doing our job, making food for anyone who stops by the complex. It’s nothing more and nothing less. We just keep our heads down and keep the stoves burning for the day and hope the gas doesn't run out before we close up.
