If you know the Bhattarahalli area in Whitefield, you know how the traffic gets on Old Madras Road. We are right at number 154, and honestly, the dust from the road is something we’re always fighting. Inside Herbs & Spices, it’s mostly just the smell of whatever is on the stove that day. We spend a lot of time in the back prep area peeling garlic and sorting through bags of coriander. It’s not a quiet job. There’s always the sound of a knife hitting a cutting board or the exhaust fan humming in the background. We started this because we knew how to cook the stuff we grew up eating. People from the offices nearby come in for lunch because they want something that doesn't taste like it came out of a factory. It’s a small kitchen, so things can get a bit hectic when three orders come in at once. We don’t have fancy uniforms or a big team. It’s just a few of us making sure the salt is right and the plates are clean. Some days the delivery trucks are late and we have to scramble, but we usually manage to get everything out. Living and working around Whitefield means you get used to the rush. We just try to keep the food consistent and the doors open on time. It’s a simple life, mostly just spices and steam and trying to keep the customers fed.
