We are located on Jamadar Street, where we run Jay Gopal Farsan House. It is a small place, but we keep it busy every single day. The main thing we do is make farsan and other snacks that people in the neighborhood like to eat with their tea. We start early in the morning, usually before the sun is even up, to get the oil hot and the dough ready. There is no fancy machinery here. We do a lot of the mixing and frying by hand. The shop is often filled with the smell of chickpea flour and spices. It can get quite hot inside, especially during the summer months, but we are used to it by now. We don't have a big team or any marketing people. It is just a few of us working behind the counter and in the small kitchen area. Jamadar Street is a narrow place and it gets crowded, but our regulars always find their way to us. We keep the snacks in glass jars or stacked in packets on the shelves. Sometimes we run out of the popular items before the afternoon is over. We do not try to be the biggest shop in the city. We just want to make sure the food tastes like it should. We’ve seen many changes on this street over the years, but we stay right here. It is a simple life and we just keep the stove going.
