We started Mama Kababis on Kosamba Road because it is where we spend most of our time anyway. It is a pretty busy spot in the Bhagrawada area, especially when the sun starts going down and people are walking around Dadiya Fadiya. The shop itself is not very big. We have a few tables tucked inside and the grill sits right near the front so you can smell the smoke from the street. Some days the smoke gets a bit much if the wind is not blowing the right way, but that is just how it goes when you are cooking over fire. We spend most of our mornings getting the meat ready and chopping heaps of onions. It is a lot of work for the hands and everything smells like spices by midday. We open up in the late afternoon. Mostly it is the same faces coming in from the neighborhood. We usually know what people want before they even say a word. It is not a fancy place by any means. The walls could probably use a new coat of paint soon, but we keep things clean where it matters in the kitchen. People stop by on their way home from work and sometimes they just stand outside on the road and chat while they wait for their parcels. We do not have a big staff, just a couple of us doing the cooking and the cleaning. When it gets hot in Valsad, it feels even hotter by the stove, but we just keep going.
