Jai Maharaja Fast Food Corner

Jai Maharaja Fast Food Corner is at Saheli Marg, inside Mumal Towers at shop number 16. It is a small place that gets very busy as the sun starts to go down. You can hear the sound of the spatula hitting the big iron tawa from quite a distance away. There is always the smell of onions frying and spices being tossed into a pan. We have a few small tables, but most people prefer to stand around outside or just take their food to their cars. The kitchen area is tight, and there’s always a lot of steam and heat coming off the stove. We don't have a huge menu, just the things we know how to make quickly and well. The plates are usually the disposable kind because it’s faster that way. We spend the afternoons prepping vegetables and making sure we have enough sauces ready for the evening rush. It’s a lot of standing and moving fast to keep up with the orders. Sometimes the line gets a bit long, and people have to wait, but nobody seems to mind too much. The neon light in the window flickers a bit, and the tiles on the floor are a little chipped, but it’s a place where people like to stop for a quick bite. We just keep the fire going and serve whoever shows up.
