Antara (Radisson Blu Hotels & Resorts )

Our restaurant is tucked inside the Radisson Blu on Rani Road here in Udaipur. Being so close to Fateh Sagar Lake means we see a lot of people coming in after they’ve been out walking by the water. It’s a nice part of the city, and the Ambamata area is usually quite lively with tourists and locals alike. Even though we are part of a bigger hotel, the day-to-day work here is much like any other kitchen. We show up, check the supplies, and get the tables set up for the next shift. The view outside is probably the best part of working here, especially when the sun starts to go down over the lake. We have a mix of local people and travelers coming through the doors. Some days are very quiet, and we just spend time polishing the glasses or reorganizing the pantry. Other nights, every chair is full and the kitchen is a bit chaotic, but we manage to get through it. We don't use any scripts when we talk to guests; we just try to be helpful and get them what they need. The menu stays pretty much the same, and we focus on getting the cooking right every time. It’s a job that keeps us on our feet, but we like the atmosphere of Udaipur HO. Working near the lake has a way of making the long shifts feel a little bit shorter.
