Running Sapara Brothers Pendavala on Varachha Road is a lot of work because the traffic never seems to stop. We are right near the Mysore Road intersection at number 2. Most of our day is spent over the large pots, stirring the milk for our pendas. It’s a hot job, especially during the summer months when the humidity in the air is high. We don't have air conditioning, just a few old ceiling fans that wobble a bit. People know us for the pendas we make, which we sell by the box or half-kilo. It’s a family business, so you’ll usually see one of us behind the counter while the others are working in the back. We have had this spot for years and the neighborhood has changed so much around us. Buildings have gone up and the road has gotten wider, but we just stay here doing the same thing. Sometimes we run out of the most popular items by early evening, and we have to tell the regulars we're sorry. We don't use any fancy packaging or have a marketing team. We just use simple cardboard boxes and brown paper bags. It’s a local shop for local people who are passing through Varachha on their way home. We just focus on getting the texture of the sweets right every single day without overthinking it. The noise from the Mysore Road traffic is always there in the background, but after a while, you don't even hear the horns anymore. We just keep serving whoever walks through the door.
