We have been running Lalji Spices out of the Panchratna Complex for a good while now. Being right near Ambar Cinema means there is always a bit of noise and people moving around, which keeps things interesting during the day. Most mornings start with the heavy metal shutters rolling up and the smell of the previous day's grinding still hanging in the air. It is not a fancy setup. We have our bags of raw spices piled up and the weighing scale stays busy from the moment we open. Sometimes the cinema crowd wanders over, but mostly it is just regular folks looking for something for their kitchen. The light in this part of the complex isn't the greatest, so we keep the overhead bulbs on all day. It gets a bit dusty with all the turmeric and chili powder flying around, but that is just part of the job. We spend a lot of time checking the quality of what comes in because nobody wants stale stock. The chairs in the back are old and the desk is cluttered with receipts and tea cups. We don't have a big team, just a few of us who know where everything is kept. It is a simple life here in the complex, dealing with farmers and local buyers, making sure the sacks are tied tight before they head out. We just focus on the work and try to get home before the evening traffic gets too bad.
