Down here on Bannerghatta Road at number 103, it always smells like oil and salt. Sangita Wafers & Farsan Products is basically a few big pots and a lot of packing space. We start early because the heat from the stoves gets to be too much later on. We peel a lot of stuff. Then we slice it and fry it. It’s loud when the machines are running. Sometimes we have to shout to hear each other. We wear these aprons that always end up with a few grease spots by noon. It's just what happens. The floor can get a bit slippery if we aren't careful with the cleaning. We pack the farsan into bags and seal them up. It’s repetitive, but we’ve got a rhythm. Neighbors stop by sometimes just to see what’s fresh. We don't have a big fancy sign, just the work going on inside. Bangalore is busy, but in our little corner in Bhestan, we just focus on the batches. My hands are always a bit oily. We try to keep the supply moving so nothing sits on the shelf for too long. It’s a small operation. We have some stools where we sit for lunch. Nothing fancy, just hard work and plenty of snacks around us all the time. We go home tired but we like what we do. The sunset usually finds us cleaning up the last of the oil vats for the next day.
