Indore Famous Jalebi

Our jalebi shop is tucked away in the Haladiya Industrial Estate area near Amrut Nagar. It’s not the kind of place people just stumble upon unless they work around LBS Marg or live in the neighborhood. We get a lot of workers from the factories coming in during their breaks. They want something hot and sugary to keep them going. The large kadhai is always filled with oil, and the smell of the fermenting batter is the first thing you notice when you walk in. I spend most of my day over the heat, swirling the batter into the oil to get those perfect circles. It takes a lot of practice to get the thickness right every time. The jalebis come out orange and dripping with syrup, and we serve them on small pieces of paper. It gets quite dusty around here because of all the trucks moving in the industrial estate, so we have to be careful about keeping everything covered up. We don't have any fancy tables or chairs, just a simple counter where we take the money and hand over the food. It’s a tough environment with the noise of the machines nearby, but we’ve made a nice little spot for ourselves. We stay open until the last shift finishes, then we clean up the grease and get ready to do it all again tomorrow. It’s just honest work for people who need a quick snack.
