Balaji Khaman House

Balaji Khaman House is located within the Sahjanand Estate, right off the S G Highway at number 39. This part of Katargam is always moving, and being in an estate means we see a lot of workers and delivery drivers throughout the day. Our place isn't big, it's mostly taken up by the large steaming vats we use for the khaman. Every morning we get the batter ready and start the steaming process so everything is warm when the first customers arrive. The floor usually stays a bit damp from the cleaning and the steam, and there’s a constant clinking of plates and spoons. We don’t have a lot of seating, so most people just stand around the small tables outside or take their food to go. The highway noise is always there in the background, a low rumble that never really stops. We’ve been at this spot for a while, and the walls have some marks from where we move the heavy crates around. It’s not a fancy restaurant with menus and waiters. You just come to the counter, tell us what you want, and we scoop it onto a plate for you. It’s hard work, especially when the weather gets hot and the steam from the kitchen makes it even warmer inside, but we’re used to it. We just keep our heads down and focus on making the food the way we always have.
