Assistant Commi

We are located down in Colsor, which is a part of Galgibaga in the Canacona region of South Goa. If you've been down here, you know it's a world away from the busy parts of the north. Our place, Assistant Commi, is really just a working kitchen environment. We aren't a big resort or a fancy dining hall. Most of our day is spent in the heat, prepping vegetables, cleaning fish that comes in from the local boats, and getting the stations ready for whatever needs to be cooked. It’s a lot of repetitive work—peeling, chopping, and scrubbing. The kitchen gets incredibly humid, especially during the monsoon months, and there’s always the smell of spices and woodsmoke in the air. We don't have a polished front-of-house staff. It’s just us in the back doing the grunt work that makes a kitchen run. Sometimes we run out of things because the delivery truck got stuck, or the power goes out, which happens a lot in this part of Goa. We just deal with it and keep going. The neighbors in Galgibaga know us as the quiet crew who starts early in the morning. It’s a tough job on your feet all day, and my hands are always a bit rough from the work. We don’t do much advertising. We just focus on the food and the prep, making sure the basics are handled correctly every single day.
