Our place is located over in D Ward in Kolhapur, though some people get confused because of the name. It’s a busy little spot, and the street outside always has something going on, whether it’s people rushing to work or just hanging around the shops. Inside the kitchen, things are usually a bit loud. You’ve got the pots clanging and the stove going almost all day long. We start early in the morning, usually around the time the milkman comes by. It’s not a big corporate setup; it’s just a few of us making sure everything is ready for the lunch rush. Sometimes we run out of things unexpectedly, like onions or a specific spice, and one of the boys has to run down the street to the market to grab more. The floors get a bit greasy by the end of the shift, and we spend a good amount of time scrubbing them down so it’s ready for the next day. It’s hard work, and our hands always smell like garlic or coal smoke, but that’s just part of the job. We don’t have fancy uniforms or a big marketing team. We just cook and serve whoever walks through the door. Some days are slower than others, especially when it rains heavily, but we still keep the lights on and the tea brewing for anyone who stops by. We also have a small seating area outside.
